Tomatoes are ripe and ready! It’s the best time to try my secret “Chef Dees Tomato Bisque.”
Tomato Bisque Recipe from Chef Dees
2 stalks celery
4 tablespoons of butter
2 cans of San Marco tomatoes
Enough fresh tomatoes (without the skin) to make 2 more cans
2 tsp onion powder
1 tsp garlic salt
1 tsp black pepper
1 tsp salt
1/4 cup 2% milk
1/4 cup whole milk
1/2 cup heavy cream
1. Shred the carrots, celery, and onions in a food processor.
2. In a large saucepan, saute the shredded vegetables in butter over medium heat for 10 minutes. Add the tomatoes to the sautéed vegetables and bring mixture to a boil.
3. Add Onion Powder, garlic salt, black pepper and salt. Lower heat and simmer for 45 minutes.
4. Put mixture back in the food processor and puree. Return processed mixture to stove and add 2% milk, whole milk, and heavy cream.
5. Reheat on low and serve.
*** Top each serving with a dash of pesto sauce .
*** Grind a little fresh pepper on each serving if desired.
*** Add a few fresh chopped basil leaves on each individual serving if desired.
